  1. 350 g self-raising flour, plus more for dusting
  2. 1/4 tsp salt
  3. 1 tsp baking powder
  4. 85 g butter cut into cubes

  8. 1 tsp vanilla extract

  2. Add 85g butter then rub in with your fingers until the mix looks like fine crumbs. Then add sultanas mix it again. Put 170ml milk into a jug and add 3 tbsp of sugar 1 egg, 1 tsp vanilla extract whisk well til all ingredients combined well
  3. Make a well in the dry mix, then add the liquid little at a time and combine it quickly with a cutlery knife – it will seem pretty wet at first.
  4. Dust some flour onto the work surface and tip the dough out. Knead with lightly hands then fold the dough over 2-3 times until it’s a little smoother. Roll out with rolling pin into a round shape but little thick.
  5. Take a 5cm round shape cutter Cut into as many rounds as possible with a fluted 5cm/2in cutter and place them on the prepared baking trays. Brush the tops of the scones with a beaten egg or any egg and milk left in the jug.
  6. Bake for 12-15 mins until risen and golden on the top. Eat just warm or cold Serve topped with jam & clotted cream.
