- 3 feasts full chana dal
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 tbsp chilli paste
- 1 tbsp chopped cashew
- 2 tbsp sultana (sweet dry grapes)
- 7 tbsp oil (preferably peanut oil)
- 1 tbsp mustard seeds
- 1/4 tsp Less than asafoetida powder
- 250-300 ml milk
- 1/4 tsp turmeric powder
- 1 tsp salt (adjust quantity)
- 6-7 tsp sugar
- 1 tsp lemon juice
- Green chutney
- As required coriander leaves
- 1 pc fresh coconut
- 5 green chillies (adjust quantity)
- 5-6 pieces garlic
- 1/4 tsp salt
- 2-3 tsp sugar
- 1 tsp oil
- as required Some water for grinding
- To garnish
- As per requirement Pomegranate seeds / sultana
- as required Nylon sev
- as required Chopped coriander
- To serve with
- As required Fried green chillies
- As required Green chutney (made as per above recipe)
Instructions to make to make Sev khamni
- Wash and soak dal for about 6-8 hours. Grind it coarsely using about 1/4 cup water (or as less as can be enough to grind evenly coarse paste).
- Make other preparations. Heat up 6 tbsp oil in a NONSTICK pan. Crackle 1 tbsp mustard and then add 1/8 tsp asafoetida powder.
- Add 2 tbsp cashew and half amount of g-g-g pastes. Fry a little. Add Dal.
- Combine everything well while breaking any lumps. Mix till the dal absorbs all the oil and it looks slightly darker.
- Add the remaining amount of g-g-g pastes and 1/3 part of the milk. Combine a bit cover and cook for about a minute on the slowest heat. ENSURE THAT IT DOESN'T GET CRUNCHY AT ANY TIME. Add another 1/3 portion of milk and cook for another minute. Repeat once or twice more.
- You'll notice that the fall will look lighter and will puff a bit. Add turmeric powder, salt, sugar, sultana and lemon. Combine everything well. And cook till the mixture leaves the pan.
- Take out a portion in a serving plate. Garnish with sev, coriendar and pomegranate seeds. Serve with green chutney and fried chillies.
- Green chutney: combine ingredients for chutney and grind. This chutney is supposed to be sweet. For that reason, there has to be more sugar and no lemon in it.
